For the Canapés:
• 10 canapé bases
For the Jowar Cheese Sauce:
• 1 tbsp butter
• 1 tbsp jowar (sorghum) flour
• 1 cup milk
• 40 g mozzarella cheese
• 3–4 garlic cloves, minced
• ¼ tsp chilli flakes
• ¼ tsp dried oregano
• ¼ tsp black pepper
• A pinch of nutmeg
• Salt, to taste
For the Topping:
• 2 tbsp bell peppers, finely chopped
• ½ cup sweet corn kernels
• Fresh microgreens, for garnish
1. Heat butter in a pan over medium flame. Add the minced garlic and sauté for about 30 seconds until fragrant.
2. Add the jowar flour and cook, stirring continuously, for about 1 minute to remove the raw flour taste.
3. Slowly pour in the milk, a little at a time, stirring constantly to keep the sauce smooth and lump-free.
4. Add the mozzarella cheese along with the chilli flakes, oregano, black pepper, nutmeg, and salt. Stir well and cook until the sauce thickens to a creamy, spoonable consistency.
5. Fold in the chopped bell peppers and mix gently.
6. Spoon the warm cheese sauce generously onto each canapé base and top with sweet corn kernels.
7. Garnish with fresh microgreens and serve immediately - best enjoyed warm and fresh!
